The day of rainbows!

So I know St. Patrick's Day is supposed to be all about the color green and everything...but I don't look very good in green if I'm being honest. Okay really though, I just like rainbows. And we all associate a leprechaun to a pot of gold and a pot of gold to a rainbow. So instead of making green things for St. Patrick's Day, I made rainbow things!

So, as most of you know I have been substituting for a first grade class while the teacher was on maternity leave...and let me tell you it was such a great experience! Not only did I learn a LOT, but I got to pretend like it was my own class! And boy do I love first grade!!! They just get so excited about everything you do, it's great and they make you feel wonderful.

So obviously my name isn't Jackman, but I put the other teachers name up on the bulletin board. Isn't it the cutest bulletin board EVER?! And I had fun making it, and that was the best part!


So not only did we do rainbow things and make rainbow things...I also made rainbow cupcakes! Mark took this lovely picture of me...just waiting for them to be done! I felt like a little kid but I was SO excited to see them and how they turned out! I totally thought they were going to be horrible...but they were PERFECT!!! And for some reason if something is rainbow, it just tastes so much better.
And, surprise! It is SO easy to do! The funny thing is, I never would have thought of it. But in order to get the colors SO bright (this was the cool part) you have to put exactly the amount of food coloring that they say. Watching it turn colors was amazing to me for some reason...I had never seen cake batter so bright!!! So here is how to do it:

Ingredients:

• White cake mix (we used an 18-1/4-ounce box)
• Food coloring (red, blue, green, and yellow)

• Baking cups
• Whipped cream (optional)

Instructions

1. Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color.
   
   

   RAINBOW COLOR	DROPS OF FOOD COLORING
   Purple	9 red and 6 blue drops
   Blue	12 drops
   Green	12 drops
   Yellow	12 drops
   Orange	12 yellow and 4 red drops
   Red	18 drops

   
   
   

2. Line 16 muffin pan wells with baking cups. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.

3. Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream cloud.

SO easy, huh?!?!



SO COOL, HUH?!?!?! Definitely the COOLEST cupcakes ever!
